Bran Muffins

From the Kitchen of: Sonya Young


3 cups bran buds

1 ½ cups sugar

1 tsp. salt

½ cup finely sliced margarine


Preheat oven to 400. Mix together and add 1 cup boiling water. Stir. Set aside and let cool 10 minutes. Stir in: 2 well beaten eggs. Alternate adding: 2 ½ cups flour, 2 cups buttermilk (mixed with 2 ½ tsp. soda) to the bran mixture. Pour into greased muffin tins and bake 18 minutes.

Pork Loin

2 tablespoons pepper
1 tablespoon salt
1 tablespoon garlic powder

Mix spices. Rub all over pork loin roast. Bake at 450 for 20 minutes.
Turn off oven. Leave oven closed for 2 hours. Slice meat into small rounds
and warm by either microwave or by sautéing before serving.

Black Berry Cobbler

Frozen berries. (Can use any frozen, canned or fresh fruit for this
recipe)My favorite is canned peaches, Rob likes black berries.
1 yellow cake mix
1 stick butter

Preheat oven to 350 degrees. Place berries in bottom of pan. Sprinkle dry
cake mix over top. Slice butter and place pats of butter all over top of
mix. Bake for 30 minutes or until lightly browned and bubbly. Serve with
ice cream.

Dinner in a Pumpkin

1 large pumpkin
4 pounds hamburger
6 grated carrots
2 medium onions, chopped
4 teaspoons salt
1 teaspoon oregano
2 teaspoons vinegar
2/3 cups chopped olives
1 teaspoon pepper
1 teaspoon garlic powder
1/2 cup soy sauce
4 tablespoons brown sugar
2 cans cream of chicken soup
6 eggs beaten



Cut top off of pumpkin and scrape out seeds. Replace lid and bake at 350
degrees for 45 minutes.

Brown meat. Add vegetables and 1 cup water. Simmer until tender. Blend in
seasonings. Add rest of ingredients and stir. Pack into pumpkin. Replace
lid. Bake at 350 degrees for 1 to 1-1/2 hours. Pumpkin may spill over, so
be sure to place pumpkin on a cookie sheet or pan. Scrape inside of pumpkin
when serving.

Variation: cooked rice, water chestnuts, tomato soup, peppers, celery, and/or mushrooms.


Crock Pot Roast Beef

1-2 onion quartered

Beef Roast (can be frozen, just cook overnight)
2 boullion cubes

1 envelope dry onion soup mix
2 cans cream of chicken soup

Water

Place onion on bottom of crock pot. Cover onion with water. Place roast on
top. Add soups, and boullion cubes. Cook for 8 hours. If roast is frozen
cook overnight.

More Fattening Ice Box Cake

Tub of cool whip, completely thawed
6 oz instant vanilla pudding mix
Milk
Graham crackers
1/2 pound powdered sugar
1/4 cup cocoa powder
3 Tbs butter
2 Tbs karo syrup




Layer bottom of 9x13 pan with graham crackers. Mix pudding with milk
according to box directions. Fold in completely thawed cool whip. Layer
half of pudding mix over crackers. Add a layer of crackers. Add a layer of
pudding mix. Add a layer of crackers. Mix powdered sugar with the cocoa
powder. Add butter and karo. Add a few teaspoons of milk. Stir until
creamy, may add more milk if too thick. Drizzle over top of crackers. Can
be spread. Refrigerate. Serve cold.
