1 cup oil                                    
2 cups diced zucchini                 
3 eggs                             
2 cups sugar                              
1 Tbsp. vanilla
1 tsp. baking powder
3 cups flour
1 tsp. salt
1 Tbsp. cinnamon
1 tsp. soda
Preheat oven to 325. Blend oil, zucchini and eggs in blender. Mix the rest of the ingredients in a mixing bowl. Add zucchini mixture. Pour into 2 greased loaf pans.  Bake for 1 hour.
